How to Get an Internship in the United States

By Denisse Romero Internships are practical experiences that bridge the gap between the educational world and the real world allowing students to understand what is really like to work in the industry of their choice. International internships offer much more than the usual internship you would conduct in your country. These types of internships will open your eyes to new ways and new personal and professional relationships, will provide you with new settings and a new culture and expand your opportunities. Here is a small summary on how to get internships in the United States. Washington, DC: Internship Central Washington, DC is probably the most popular place for internships in this country. Hundreds of students from every corner of the world congregate in this city during the summer months to pursue internships in almost every field. Of course, the most popular field is political science, but tons of students also pursue internships in science, technology, economics, business, art, etc. In fact, Washington, DC is much more than politics. It’s a beautiful city surrounded by monuments and museums that are free to the general public. The Smithsonian museums offer all kinds of internships and fellowships year-round in subjects such as art, public relations, science, public policy, and other fields. International students are eligible to apply to certain internships provided by the Smithsonian free-of-charge. Other entities that attract tons of international students are the international organizations located in this city such as the World Bank, the International Monetary Fund and the Interamerican Development Bank. International and national students are encouraged to research and apply with plenty of time before the deadline to any of these internships that usually carry a nice stipend or a monthly wage. It’s important to understand that many internships are unpaid, however the professional expertise and personal connections you will acquire more than make up for the lack of payment. Some internships offer stipends that usually cover food and/or transportation. Other internships provide nice monthly wages that allow students to pay for housing, food, transportation and other personal expenses. There are also internship programs such as the Washington Internship Program, the Washington Internship Institute, or the Washington Center that provide internships to international and domestic students. These programs usually charge fees that average $3500 for internship placement services, academic courses, housing placement, and group activities. For those students already studying in US universities and colleges, the university career center is a great source for internship opportunities. Finally, newspaper and online job ads may also provide you with a good list of potential internships. The Work Permit Process for F-1 Students F-1 visa students (students currently enrolled in US universities and colleges) are eligible to work as interns 9 months after being admitted in the country as F-1 students. The process varies from college to college, but the following steps are recommended: 1. Talk to your international students counselor to see if you are eligible for curricular practical training (CPT). Curricular Practical Training (CPT) is an employment option available to F-1 students where the practical training employment is considered to be an integral part of the curriculum or academic program and where you are awarded college credit. 2. Talk to your college counselor, internship director or career counselor to see if you qualify for internships at this point in your college life. 3. Look for internships everywhere: newspapers, online job banks, internship centers, companies, organizations, etc. Submit your resume to your internships director or college professor in charge of co-op and internship programs. 4. Once you have been hired as an intern, go to the international students office and fill out the CPT form. Once this is approved, your I-20 will specify permission to engage in CPT. Your employer and dates will also be recorded on your I-20. The Visa Process for Other Students Students or recent graduates from other countries who wish to pursue an internship in the United States will usually need to be sponsored for a J-1 visa. J-1 visas are provided to exchange students and trainees. Your internship program will usually sponsor you for this type of visa. It’s important that you understand that students who come on a J-1 visa will be required to leave the country within 30 days after the internship ends. Also, J-1 visa holders will not be able to return to the US for 2 years following their internship experience. The reasoning for this is that students must take back and apply in their native countries the skills and expertise they acquired while working in the USA. For more information about J-1 visas, please visit this site: http://travel.state.gov/visa/temp/types/types_1267.html#6 Students who wish to work as temporary workers - usually in the hospitality industry as front desk agents, waiters, housekeepers, ski instructors and more are eligible for H-2 visas. The H-2 visa is a visa for unskilled workers and is the visa most often used for workers in hospitality and entertainment during the summer months. Work abroad programs usually sponsor you for this type of visa. For a directory of work abroad agencies click here. Note that international organizations such as the World Bank, IMF and IDB may sponsor their interns for a G-4 visa instead of other types of visas. The USCIS.gov website has comprehensive information about H-2 and G-4 visas. The following steps are recommended: 1. Find an internship or work abroad program that meets your criteria. Make sure it is a reputable and certified organization. 2. Apply for the internship or work abroad program. 3. Once you have been admitted, request a detailed explanation of the steps and documents necessary for your visa. 4. Gather all the required documents for your visa interview and visit the US consulate or embassy in your area. Final Words Although this article has focused on internship opportunities available in the Washington, DC area, internships are available in all cities throughout the United States. It is important to select internships that provide you with valuable skills and unique experiences. Avoid at all costs internships where making copies and serving coffee will be your major responsibilities. Also, if you have decided to enroll in an internship program, make sure that it is a reputable and certified organization capable of sponsoring foreign students. An internship in the United States and in other parts of the world is a beautiful experience that combines new experiences, new cultures, new perspectives and your personal and professional growth. Using Your Dog’s Hair

By Fran Pike Dog hair (called chiengora)can be spun into yarn, much like sheeps’s wool, alpaca, or any other animal fiber. The process is the same. Dust and oils can be washed out of the spun hair, so there is no “doggie odor.” Amazingly, the spun yarn is warmer than wool, easy to care for, and has an angora-like fluffy texture. Until recent times, most dog owners didnt realize the beauty of the colors and texture of their dogs hair could be used in the manner of sheeps wool. It’s really as easy as brushing your dog. There are some guidelines to getting the best and softest yarn possible. When brushing your dog, be sure to collect from the parts where the hair is the longest and softest. This is undercoat. Hair must be 2 inches or longer for best results. Hair should be clean and dry, with no grass or debris in it. Brush the hair from the longest, softest parts of the dog, saving only this hair. It is the undercoat you want, not the coarse top coat. Clippings will not work well for spinning with dogs that have double coats. There is too much guard hair, and the yarn quality will not be as nice as the pure undercoat. Remove dog hair from the brush and save it in a paper bag. Save hair that is completely dry, and as clean as possible. (Do not attempt to clean it once it is brushed off the dog!) Bathe your dog first, and brush when the hair is dry. Paper allows the fiber to breathe and not be trapped with oils in a plastic bag. The best way to store the hair from brushings, is in a paper sack, or cloth bag, such as a pillowcase. Despite what your mother or grandmother used to do, NEVER USE MOTH BALLS! Moth balls contain a toxic chemical that is dangerous to breathe, and it is impossible to remove the mothball smell from the hair. How much do you save? It depends on what will be made with the finished yarn. Most small projects use about 6 ounces of hair. Transforming dog hair into yarn takes much time and care. First, the yarn is evaluated for spinning. Depending on length, and how the yarn will be used, I determine if the hair needs blending with a soft merino wool. Blending minimizes shedding out, and produces a more durable yarn. Although most people want 100% of their dog’s hair to be used in a product, this isn’t always possible. The dog’s color can still be seen and the fluffy texture is still present in the finished yarn. From this point, the process is the same as spinning sheep’s woolI use a drum carder for the blending process. This carder has metal teeth on it, that comb the wool, so the fibers are lined up and ready for spinning. The fiber is lifted off the drum carder, loosely rolled up, and set aside by the spinning wheel. The yarn is spun into single strands on a spinning wheel, and then plied for strength. The yarn is then cleaned by hand, using a mild conditioning detergent or dog shampoo, and air dried. It is then wound into balls or skeins and is then ready to be knitted or crocheted into a scarf, hat, ornament, and many other things. Because it is handcrafted, and personal, a chiengora gift makes a sentimental remembrance. It is better to begin collecting hair while your pet is healthy and younger. People have often told me that it is comforting to have a soft, “pettable” scarf, hat, teddy bear, or other item made from their dog’s hair, and it brings back happy memories. Fran Pike spins and knits with luxury fibers, including angora, alpaca and chiengora. She founded Rover’s Comb to enable people to have beautiful keepsakes made from their dogs long, brushed hair. Writing Scholarship Essays

By Low Jeremy Fact number 1: A large percentage of scholarship applicants today fail in writing one of the most important stage in application: writing a good scholarship essay. Fact number 2: You could be one of them. But from these 2 facts, we can still arrive to a third one: there is still hope. Yes, you can still write a scholarship essay that creates result. Whether you are a writing guru or a high school slob, you can always write a good scholarship essay if you follow one basic writing secret (which of course is not a secret at all, it is just that few people follow this): simplicity. Here are the tips in writing simple yet effective scholarship essay: Write as you speak. Thesaurusizing your scholarship essay would have two effects: one, wrong use of terms will detract the purpose of the essay, and two, you probably will not pass. The thing is: keep it simple, clear and precise. Use words that are easy to understand like the words you use when you converse. Write interestingly. Make sure you dont bore your readers. Keeping up a lively essay would let your reader to finish your essay but make sure you still focus on the purpose. Tell about yourself Since you are writing to ask a sort of favor, your reader would like to know more about yourself. Usually, most scholarship application would require you to pass an essay together with your resume. Write things about yourself that are not included on the resume. Keep it short Write a short scholarship essay but it does not mean you omit important sentences that needs be addressed. Never be wordy on your essay. If you can pack your thoughts in the shortest possible terms, do so. It is better to read a 5-liner paragraph than a 10-liner that says the same thing. Do variations If your first sentence starts with an I, the second sentence should be different. Be creative in writing your essay. Use active voice Using active voice (sentences without the use of the word be) keeps reading continuous and interesting. Using passive voice on the other hand keeps the essay uninteresting and flat. Seek for opinion If you have finished writing your essay, let others read it so that you get feedbacks. In this way, you can improve your articles more. Edit, re-edit and edit some more Make improvements. Read your essay over and over again until you are confident that it is error-free. Heartburn and Celiac Disease: Gluten Sensitivity as a Reversible Cause of Gastroesophageal Reflux

By [http://ezinearticles.com/?expert=Dr._Scot_Lewey] Dr. Scot Lewey One of the symptoms many people experience frequently and most people have had sometime in their adult life is heartburn. The medical term for this is pyrosis, from the Greek word pyro meaning fire or heat. Heartburn is the classic symptom of gastroesophageal reflux (GER) or reflux. Most people have heard of these terms now because you cant sit through an hour of television these days without seeing at least one commercial if not several advertising antacids like tums or acid blockers like Pepcid AC and Nexium. Most people are not aware that heartburn is a common symptom of gluten intolerance or sensitivity. Celiac disease, which is a severe intolerance to gluten (the major storage protein in wheat and similar proteins in barley and rye resulting in intestinal damage) is estimated to affect 1 in 133 people in the U.S. and approximately 1/100 worldwide. Most of these people are undiagnosed. Many are being treated for reflux, irritable bowel syndrome, gas-bloat dyspepsia, lactose intolerance, or just suffering ill health unaware that a gluten free diet (GFD) might relieve their symptoms if not improve them significantly. Dyspepsia is a medical term for stomach upset, indigestion or gas-bloat abdominal discomfort. This commonly occurs in celiac disease. Stomach contractions have been shown to be impaired in celiac disease contributing to the bloating sensation. This is confirmed by diagnostic studies revealing poor stomach emptying. Delayed stomach emptying is frequently accompanied by low pressures in the lower esophageal sphincter (LES) of the esophagus or swallowing tube. The LES is supposed to be a barrier to regurgitation of stomach contents up into the esophagus. When stomach juice that is acidic refluxes into the esophagus a burning pain is typically felt in the chest that is described by most people as heartburn. When acid frequently regurgitates up into the esophagus a burn of the lining occurs that is termed esophagitis or reflux esophagitis and defines gastroesophageal reflux disease (GERD). Celiac disease patients have been shown to have a high prevalence of GERD and reflux esophagitis. Treatment with a gluten free diet has been shown to decrease the rate of relapse of GERD symptoms. In clinical practice, many of us have observed that a gluten free diet results in marked improvement of heartburn symptoms in not just celiac disease but in many people. As a practicing gastroenterologist, (www.thefooddoc.com) I have had patients referred to me for reflux symptoms including several who were being considered for possible surgery for GERD. Upon discovery of celiac disease or non-celiac gluten sensitivity and institution of GFD they have had improvement or resolution of symptoms. Personally, I experienced frequent enough heartburn that I was taking a daily acid blocker. When I discovered that though I had symptoms of gluten sensitivity and was DQ2 positive I had negative blood tests but elevated fecal gliadin IgA and tissue transglutaminase IgA antibodies, I initiated a GFD. My heartburn went away and I stopped taking a daily acid blocker. Now I only have heartburn rarely, usually with obvious dietary indiscretions like too much coffee, chocolate or wine. My friend and colleague, Dr. Rodney Ford, who practices pediatric gastroenterology in New Zealand, has communicated to me his similar experience with children. Since expanding gluten free diet to those children he suspects of gluten sensitivity, not just those in whom celiac disease is confirmed by traditional or classic strict diagnostic criteria, he has noted a marked decrease in the number of children with GER. He states it has been many years since he has had to refer a child for surgery for reflux. There have been concerns about clinical significance of known acid suppressive therapy impairment of digestion though so far the worries about the increased risk for cancer seen in lab rats have been unfounded. Recently, an increase risk of community-acquired pneumonia attributed to loss of acid reduction of bacteria in the stomach was found in patients with chronic lung disease or with other risk factors. There also is the on going debate about the high costs of the newer, more effective acid blocking drugs as well as their potential side effects. Some also raise concerns of an increased risk of food intolerance or allergy while on acid suppression. These issues and the risks of undiagnosed celiac disease not withstanding should give one pause to the idea of chronic acid suppressive therapy without investigating the possibility of undiagnosed celiac or gluten sensitivity with a trial of GFD. An Introduction to Bach Flower Essences Part II - The Seven Helpers

By Misty Cech The 12-7-19 Method of Bach Flower Classification Dr. Edward Bach, developer of flower essence therapy, classified the original 38 essences he used in his practice according to the 12-7-19 method: the Twelve Healers, the Seven Helpers, and the Second Nineteen. In part I of this series, the Twelve Healer flower essences were reviewed, along with the underlying theory of flower essence therapy here well have a look at the rhymes and reasons of the Seven Helpers. Dr. Bach prescribed one or more of the Seven Helper essences to patients who did not seem to be responding sufficiently to therapy with one of the Twelve Healers. The Twelve Healer flower essences Impatiens, Gentian, Mimulus, Clematis, Agrimony, Chicory, Vervain, Centaury, Scleranthus, Water Violet, Rock Rose, and Cerato were developed by Dr. Bach to address what he saw as the imbalances of the twelve archetypal personality types. It is through the vibrational transformation of these imbalances that healing of overlying disease states can, in many cases, be initiated. However, Dr. Bach found there were individuals that did not respond to flower essence therapy with the Twelve Healers; this lead him to the discovery of the Seven Helpers. The purpose of the Seven Helpers is to address chronically ingrained negative vibrational patterns which may be obscuring the primary personality type. For example, Olive, one of the Seven Helper flower essences, is prescribed for states of exhaustion, where one has been worn out by the struggle of healing or other life event. In this case, it may be difficult to see what the primary personality type of the individual may be, as true fatigue does not let a whole lot else show through - this real weariness may mask other personality traits or patterns. Or it may be that the chronic state simply prevents progress on the healing path that could otherwise take place. Again, using Olive essence as an example An individual may clearly be in need of one of the Twelve Healers. Perhaps they live in fear and are in need of Mimulus, and clearing this fear would allow them to heal. However, their fatigue is so great as they do not have the strength to work with these issues in this case, it may be helpful to use Olive along with Mimulus to offer a more complete support from the flower essence therapy. The Seven Helper essences can certainly be administered individually as well, particularly if a specific flower essence is strongly indicated. Dr. Bach had also written that if an individual is not responding to other essences, Wild Oat (one of the Seven) may be used: If ever a case does not respond to treatment, give either Holly or Wild Oat, and it will be obvious which of the other remedies may be required. In all cases where the patient is of the active, intense type, give Holly. In patients who are of the weak, despondent type, give Wild Oat. Beyond the original works of Dr. Bach, the Flower Essence Repertory from Flower Essence Services offers descriptions of these seven essences beyond what a physician may see. FES broadens the application of the flowers to include their use for those needing change that may or may not be related to a health condition. This is an important point, as one may have tendencies they may wish to transform, but are at no serious risk. This application of flower essence is encouraged, for any support for personal and soul evolution is indeed invaluable. So within the following descriptions of the Seven Helper flower essences, a broad view will be maintained, so that the greatest audience may find a suitable essence. As always with flower essence therapy, in cases of illness, treatment is not a substitute for proper professional care. It may be the case that an illness may have emotional roots, and that flowers can be of help, but one should not solely rely on self-prescription of flower essences as a cure. And on to the descriptions The Seven Helpers: Olive As stated earlier, Olive flower essence is indicated where great fatigue has set in. An individual may be pale, worn out and / or exhausted after excessive worry, illness, grief or other struggle. The individual perhaps feels they do not have the strength to continue; that both their physical energy source has been spent. The Olive remedy allows one to tap into a new source of light, helping one see and feel a rejuvenation that comes from establishing (or re-establishing) a connection to a universal energy. This connection may provide the impetus needed for change in other areas, or may be transformative in and of itself through helping on realize that the etheric spirit body and the physical body are inseparable. Gorse This flower essence is used where one has lost will due to discouragement, becoming hopeless and resigned to ones condition. They have perhaps been giving too much energy to the negative possibilities, solidifying this outlook so no progress can be made. This remedy restores hope to such individuals, so they may be able to have a brighter outlook, perhaps more joy, when confronted with lifes challenges. Oak The remedy for those committed to over-striving, regardless if that striving is having a positive result. Those in need of the Oak flower essence have great determination and strength, which can be true assets. However, at times it is crucial to balance this force with subtlety and grace. The individual may have even become resigned to the inevitable failure of their endeavor or succumbing to an illness, yet they continue with their efforts. Oak helps restore a balance, allowing one the freedom of letting up or resting when that is in fact what is required. An important essence in todays hard-striving world. Vine For those who see their way as the right way or the only way, Vine essence allows an opening in ones perception for other points of view. An individual in need of Vine may have a domineering personality, insisting that everyone else follow their lead, including health professionals. Such a point of view can lead to great stress when it is perceived do not share the same ideas, and that harm, or at least lack of healing, may come about. Vine essence may soften this selfish nature, assisting one to understand that other points of view may be entirely valid, and in fact, more complete than ones own. This allows the individual to receive needed support, often a key component in any personal transformation. Heather The Heather type appear self-obsessed, talking continually about their own situations and problems. Such persons are in fact truly lonely and often in great emotional pain. They may feel an emptiness or hunger, which they feed from the attention of others. This flower essence helps one make a connection to the Higher Self, finding peace and solace in the unity of all being. This realization helps one overcome the loneliness and disconnection they may feel, drawing on emotional self-sufficiency and true shared relationship with others for assistance. Rock Water For those that are too hard on themselves. Being reflective and aware is one thing, to go so far as to limit ones (and ones friends and family) enjoyment of life is another. Flexibility and spontaneity are key components to the life well lived. Further, a rigidity in lifestyle can prevent one from finding joy, an important factor in healing from many illnesses. This essence is sometimes indicated for those beginning flower essence therapy or those who do not see results, as it may assist in opening the soul to the energies of the plant realm. Wild Oat Health and happiness are very much connected with ones ability to find ones true vocation. Wandering through life feeling a lack of purpose can lead to distressed states, with addictions or despondency being possible results. Wild Oat flower essence may help align one with their true calling, so that both the individual and the greater environment can benefit. When one finds this sense of meaning, there is a strong inner light that can shine forth, supporting ones own health, and the health of those around them. These are the Seven Helpers, as categorized per Dr. Edward Bachs 12-7-19 flower essence method. It is said that with the Twelve Healers and the Seven Helpers, one can support transformation of many vibrational/emotional states. At the same time, it is important to keep ones mind open to possibilities; there are a great number of researched flower essences available, ones that may be even more precisely applied to a particular situation. The Healer and Helper essences are however, a fantastic place to start if one is seeking an effective collection of remedies, suitable for the needs of many beings. Wedding Gift Registry - Keeping Track So You Can Prevent Duplication

By Dean Shainin When deciding for a wedding gift and you do not want to leave your home or you would rather browse the possibilities first, check wedding gift registries online. If not, most stores have them. Almost all stores allow couples to open their registry up to 16 months before the wedding and a year forward to allow guests options to buy their first anniversary presents. All that one has to do is visit a preferred store and check out its registry department. Check out the store return policy in case you would need a replacement. Keep in mind that stores do not usually issue cash refunds only store credit. It may be a wise idea to bring your fianc along so both of you can decide on the things that you would need. Here are a few tips that could help you in opening up a wedding registry. First, keep in mind that opening up registries can be fun both for you and your groom so do not rush. Wear comfortable shoes and shop around. Opening up wedding registries does not have to be done in a day. Prolong the event if you like. The fun memories you and your husband can share today will give you good memories later in your marriage. Aside from the return policy of the store, find out how easy it would be for you to exchange items with them later on. Important questions to consider before you sign up. How do they update their wedding registry and how often? How long will your wedding registry stay in their records list? Does the store have a toll free phone number with quality customer service? Do they accept orders by phone and do they make deliveries? Do they have a website for you to keep track of the gift registry? Opening up wedding registries will allow family and friends to choose their presents from the choices in your registry. The information that the couple has in their wedding registry can provide the guests with information that will prevent duplication of wedding gifts - that is at least the idea. Couples about to be married would more likely need the basic things to start a home. Opening up a wedding registry in stores would tell your guests your preferred items. Mostly this would include china, cooking utensils, silver ware, crystals and drinking glasses, linen, home improvement items and accessories. However, to give the guests a wider latitude of things to choose from, it is perfectly okay to register for the more non-traditional gifts like golf clubs (if the groom is into golf), music instruments, and household appliances. If the couple needs to splurge on other items that are more expensive, than that is perfectly all right. Provided the couple does not go overboard. A plasma television for example might be cool, but it could also drive some guests to another store that you are not registered. Couples that has been living together for a while would already have those basics. It becomes more important then to open a wedding registry so guests are informed of the things that you still need again to avoid duplication. If you do not need another blender, then do not register for it. You might be needing other things like a vacation, a honeymoon getaway, dinner reservation for the weekend, shares of stocks, house cleaning services, mortgage payments, garden supplies, wines and upgrades in your appliances and upgrades even on the more traditional wedding gifts. The store in which you register will largely depend on your needs. Many stores have in their line almost everything that a starting couple will need at budget prices while Hect’s or Macy’s have a good line of the more expensive items. But most stores have wedding registries that you can make a list to communicate and keep track of your wedding presents. Kiss the Ring: Hierarchy Matters

By Karen Otazo Someone once asked a Washington insider how to deal with important people whom you cant stand. His reply? You put on your respectful face and you dont blink. This strategy is known in business circles as kissing the ring. Its origins lie in a much earlier era, when royalty and clerics wore rings of office denoting their status. Bowing your head as you kissed their rings was how you showed respect for their office, while not necessarily feeling that sentiment towards the characters themselves. Why go to the trouble to show deference to someone you dont personally like or respect? In the cut and thrust world of business, as in the political sphere, its all about survival. Or, to look at it more positively, enlightened self-interest. Like it or not, the business world is structured by a strong sense of hierarchy. Why else would we be so fixated on gaining promotions and better titles? Those high up can have a significant impact upon your reputation and career: positive if they like you and see you playing by the rules, negative if they feel slighted by you in some way. Showing them the appropriate respect helps keep your career path obstacle free. Kissing the ring might mean responding in a neutral to positive way when someone important says something off base in a meeting. Or staying positive with your boss when he or she doesnt understand what youre trying to do or say. However irritated or amazed you feel, keep your facial expression kind and free of negativity, a kind of poker face. Its worth practicing this in front of the mirror so that its ready to put on when you need it. Kissing the ring doesnt mean being sycophantic though. Its just about treading carefully around egos. Theres nothing wrong with telling a senior person that you think there might be a better way of doing things, but just make sure that you think strategically and dont react there and then, especially if there are others present. If you are genuinely concerned about something you might want to bring it up in private in a neutral way but not make a big deal out of it. You do this by talking about it in a low-key way, tactfully introducing your point by saying, By the way, what do you think of or, Is there is a case to be made for this other point of view? Are there dont kiss the ring moments too? You bet. As soon as anything looks the slightest bit immoral or illegal you need to stop and think. Dont jump to conclusions, but once youve confirmed that something improper is up, do everything you can to extricate yourself from the situation before you get into trouble. If, for example, your company requires that the highest level person at a dinner should pick up the expenses then you might hesitate before paying for something so that your boss doesnt have to put it on his or her expense report. While illegality is something that you should always report, without exception. There are ex-employees of Enron or Health South, currently in jail, who probably wish they had spoken up, or even left their jobs, rather than keeping mum. Kissing the ring is one of a repertoire of respectful behaviors that will serve you in good stead with high ranking people. At some point in your career you will have to suck in your gut and show deference to a senior person whom you cant stand. Be prepared for it. Winter is a Cumin In

By Bruce Burnett With my strong preference for cooking with fresh, not dried, herbs it seems natural in the winter to focus more on spices, most of which cannot be grown in a temperate climate anyway. Cumin is one of the oldest cultivated spices. It was a popular spice and medicinal herb in ancient Egypt, being used for illnesses of the digestive tract and to treat coughs and chest colds. It has also been used as a painkiller, particularly to relieve toothache. Three pain-relieving compounds have been found in cumin, along with seven that are anti-inflammatory and four that combat swelling. Some herbalists recommend cumin to relieve carpal tunnel syndrome. Cumin is very popular in Indian cooking and Indian herbal medicine. In Ayurvedic medicine a popular cure for hangovers is one teaspoon of limejuice and a pinch of cumin in a glass of orange juice. Ayurvedic practitioners also recommend drinking a cumin, coriander and fennel tea to help clear up acne. Combine the herbs equally for a total of one teaspoon and steep them for 10 minutes in hot water. Strain the tea and drink three cups a day after meals. Even if it doesnt clear up your acne it will certainly help your digestion. Like its close relatives caraway and anise, cumin alleviates flatulence and bloating and invigorates the entire digestive system. A 4th-century BC herbal medicine text has been found that lists cumin as a treatment for obesity and urinary and liver problems. The spice is mentioned in both the Old and New Testaments (“Woe unto you, … for ye pay tithe of mint and anise and cummin.”) and the Romans imported the spice from Egypt and used it as we use black pepper today. Cumin used to symbolize greed, which is why the Roman Emperor, Marcus Aurelius, was nicknamed “Cuminus”. During the Middle Ages it became associated with retention, attachment and fidelity. It was added to bread to prevent it from being stolen by wood demons. Cumin was also alleged to have the power to keep a thief inside the house along with the bread he was trying to steal. Country lasses used to make their lovers swallow cumin to ensure their fidelity. Soldiers sweethearts would put cumin in their wine and bread to guarantee their devotion. Cumin has lost some of its popularity as a culinary spice. In Germany and Holland it is still used to flavor liqueurs and cheeses. Ground caraway seeds make a reasonable substitute for cumin, but the latter is much hotter. The zing in cumin is due to cumin aldehyde, which, like capsaicin in hot peppers, is insoluble in water. This is why drinking water with spicy food doesnt tame the heat. Alcohol or milk fat will however. Ground cumin seeds lose their flavor rapidly so it is better to buy the seeds and grind them in an old coffee grinder as needed. Before grinding, lightly roast them in a dry frying pan to bring out their flavor and aroma. For those who like spicy food, try some baharat, a fiery concoction from Africa for seasoning meats and vegetables. Stored in an airtight jar it will keep for up to four months. nutmeg, grated; 1 Tbsp. black peppercorns; 1 Tbsp. coriander seeds; 1 Tbsp. cumin seeds; 1 Tbsp. cloves; Small piece of cinnamon; 6 small cardamom seeds; 2 Tbsp. paprika; 1 tsp. ground chili. Grind all the ingredients together. Heres my own cold combating soup (with apologies to American poet, Ezra Pound): Chicken Cumin Soup: (Winter is a Cumin in, loud sing oh damn! Snow doth fall and car doth stall And how the wind doth ram) 1 boneless, skinless free range chicken breast, cut into pieces; 4 cups unseasoned chicken or vegetable stock; a cup of dried red lentils; 4 cloves garlic, minced; bay leaf; 1 small piece ginger root, minced; 2 medium onions, finely chopped; 1 fresh jalapeno pepper, chopped fine; 1 tsp. ground cumin seed; tsp. ground turmeric; Juice from lemon (if youre making this recipe in the summer, some fresh chopped lemon balm or lemon thyme is even better); 1/3 cup of milk, light cream or substitute of your choice such as coconut milk; 2 Tbsp. extra virgin olive oil. Saut the chicken in the olive oil until lightly browned all over. Remove the chicken and set aside. Lightly saut the onions in the olive oil until translucent, adding the jalapeno and the garlic after several minutes. Add the rest of the ingredients, including the chicken, but without the milk and the lemon juice. Simmer until the lentils are tender, about 45 minutes. Just before serving, add first the lemon juice and then the soymilk, bringing the soup on a low heat back to simmer before serving. Before serving add salt to taste. Also, if it isnt sufficiently fiery for you gastronomic pyromaniacs, add a little cayenne pepper. This immune boosting recipe will serve two and is guaranteed to search and destroy any lingering viruses that are threatening your well-being. An excellent accompaniment is some fresh baked corn bread. Bruce Burnett is an award-winning writer, a chartered herbalist and author of HerbWise: growing cooking wellbeing.
